Chickpea Brownies
If you could only eat one food for the rest of your life what would it be? Mine would definitely be chickpeas. Why? Because chickpeas can literally do anything!
As a vegetarian chickpeas hold a special place in my heart. They’ve become a staple in my diet as a plant based protein. In a Buddah bowl, on top of salads, hummus, falafel…The list goes on. But did you know chickpeas also make a great dessert?!
This brownie recipe uses chickpeas in order to produce a grain free, protein packed dessert and it’s definitely a must try!
*Disclaimer* Yes, regular brownie mix definitely still taste better but try out this recipe for a gluten free, healthier alternative :)
Ingredients:
1 can of drained and rinsed chickpeas
1 banana
2 eggs
1/4 c coconut sugar
1/3 c cacao powder
1 tsp baking powder
dash of salt
1 tsp of vanilla or some honey
Directions:
Preheat oven to 350 degrees
Combine all ingredients into a food processor or blender
Pour into a nonstick pan
Bake for 10-12 minutes
