Peach Summer Salad
This is one of my all time favorite summer salads! Combine the following ingredients, no measurements necessary:
Lettuce
Arugula
Peaches (sliced)
Walnuts (chopped)
Tomatoes
Cucumber
Red onion
Goat cheese (crumbled)
Protein of choice (I recommend chickpeas, salmon, or chicken)
Dressing: a mixture of olive oil, balsamic vinegar, dijon mustard, salt & pepper
