Creamy Vegan Avocado Pasta
Ingredients:
Pasta of choice
1 c pasta water
1 avocado
Juice of 1 lemon
Handful of spinach
1 minced garlic clove
1/2 tsp Italian seasoning
1/2 tsp red pepper flakes
1 tbsp nutritional yeast
1/4 c nut milk
Salt & pepper
Directions:
1. Cook pasta as instructed. Save 1 c of the pasta water before draining
2. In a blender, combine all other ingredients to make a sauce. Add additional water to thin if needed
3. Pour the sauce over the pasta. Top with more red pepper flakes, lemon juice & nutritional yeast if desired
