Roasted Cauliflower and Carrot Dinner
This is one of my favorite easy vegan dinners that everyone will love!
Ingredients:
Head of cauliflower
1-2 c baby carrots
Can of chickpeas
Handful of spinach (chopped)
Avocado
Olive oil
2 lemons
Rice
Salt and pepper
Directions:
Cut cauliflower into bite size pieces
Place cauliflower and carrots on a baking sheet. Drizzle with olive oil, the juice of one lemon, salt and pepper
Bake at 425 for 30-35 minutes
Meanwhile, sautee drained chickpeas on stove top for about 6-8 minutes and cook your rice as instructed
Once cooked, place roasted veggies and chickpeas on top of the cooked rice
Top with spinach, avocado and lots of lemon juice
