Avocado Mash

Ingredients:

  • Chickpeas

  • Avocado

  • Lemon

  • Cucumber

  • Olive oil

  • Microgreens (optional)

  • Salt & pepper

Directions:

  1. Drain chickpeas and place in a bowl

  2. Add avocado to the same bowl and mash together

  3. Squeeze the juice of a lemon and then mix

  4. Top with sliced cucumber, microgreens, salt and pepper

  5. Enjoy!
