Chickpea Stuffed Sweet Potato

Ingredients

  • Sweet potato

  • Can of chickpeas

  • Couple handfuls of spinach

  • Salt

  • Pepper

  • Paprika

  • Tahini

Directions

  1. Preheat the oven to 425°F

  2. Poke holes into sweet potato with fork; set on the baking sheet

  3. Bake for 40-50 minutes - until puffed up and soft inside when pierced with a fork

  4. Meanwhile, season chickpeas with salt, pepper and paprika. Sautée on stove top until crispy. In the final few minutes of cooking, add in the spinach

  5. Cut sweet potato down the middle. Add in chickpeas and spinach

  6. Top with red pepper flakes and tahini
