Fluffy Gluten Free Pancakes

What you need:

  • ½ cup greek yogurt

  • ½ cup almond milk (or dairy free milk of choice)

  • 1 egg

  • 1 tablespoon coconut sugar

  • 1 teaspoon vanilla extract

  • ¼ teaspoon almond extract

  • 1 ¼ cup old fashioned rolled oats

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 scoop collagen peptides (optional)

What to do:

  1. Combine all ingredients in a blender.

  2. Heat a pan on medium heat with olive oil or butter.

  3. Pour batter into pan, approximately 1/4-1/2 cup per pancake.

  4. Brown on both sides.

  5. Enjoy warm. :)
