Fluffy Gluten Free Pancakes
What you need:
½ cup greek yogurt
½ cup almond milk (or dairy free milk of choice)
1 egg
1 tablespoon coconut sugar
1 teaspoon vanilla extract
¼ teaspoon almond extract
1 ¼ cup old fashioned rolled oats
2 teaspoons baking powder
¼ teaspoon salt
1 scoop collagen peptides (optional)
What to do:
Combine all ingredients in a blender.
Heat a pan on medium heat with olive oil or butter.
Pour batter into pan, approximately 1/4-1/2 cup per pancake.
Brown on both sides.
Enjoy warm. :)
