Lemon Parmesan Asparagus

I love the zesty lemon flavor of this dish which makes it taste fresh and light. This recipe makes a great vegetarian and gluten free appetizer for a dinner party, plus it takes less than 20 minutes to make!

Ingredients:

  • 1 lb asparagus

  • 2 tbsp olive oil

  • 1 lemon

  • 3 tbsp parmesan cheese

  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400 degrees F

  2. Toss asparagus with olive oil, salt and pepper

  3. Roast for 10-12 minutes

  4. Top with the juice of one lemon, parmesan, and lemon zest

  5. Enjoy hot!
