Lemon Parmesan Asparagus
I love the zesty lemon flavor of this dish which makes it taste fresh and light. This recipe makes a great vegetarian and gluten free appetizer for a dinner party, plus it takes less than 20 minutes to make!
Ingredients:
1 lb asparagus
2 tbsp olive oil
1 lemon
3 tbsp parmesan cheese
Salt and pepper to taste
Directions:
Preheat oven to 400 degrees F
Toss asparagus with olive oil, salt and pepper
Roast for 10-12 minutes
Top with the juice of one lemon, parmesan, and lemon zest
Enjoy hot!
