Blueberry Oatmeal Bake
The best part about this recipe is that it’s made with simple ingredients that you likely already have in your pantry. Also, it doubles as the perfect brunch dish or evening dessert!
Ingredients:
2 & 1/4 c gluten-free rolled oats
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
2 smashed ripe bananas
3/4 cup milk of choice
1 tsp vanilla extract
1/4 c honey
1 c blueberries
Directions:
Preheat oven to 350. Spray an 8x8 baking pan
In a bowl combine oats, baking powder, cinnamon, and salt
In a separate bowl combine mashed bananas, milk, honey, egg, and vanilla extract
Add the wet ingredients into the dry and mix well
Fold in the blueberries
Pour mixture into the prepared baking pan
Bake for 35-40 minutes
Recommended use:
Enjoy warm for breakfast
Pair with vanilla ice cream for dessert
