No Bake Gluten Free Cookies
I think it’s safe to assume that most of us would agree baking is tough. Unlike cooking, you can’t just guess the ratios or estimate the cooking time. Baking is a science - unforgiving, with very little room for error.
That’s why I obsessed this no-bake cookie recipe because it’s almost impossible to mess up!
Plus, this recipe is gluten-free and dairy-free so everyone can enjoy :)
Ingredients:
3/4 c nut butter of choice
3/4 c almond flour
1 tsp honey or vanilla extract
1/3 c chocolate
1/2 tsp coconut oil
Directions:
Combine almond flour, nut butter, and honey or vanilla in a bowl
Shape the dough into desired shape and size
Place in freezer for at least 1 hour
Melt chocolate and coconut oil together
Once the dough has hardened, cover the cookies with the melted chocolate
Place in freezer again until chocolate has hardened
Enjoy!
Keep in fridge or freezer for up to 1 week
