Gluten Free Peanut Butter Banana Swirl Muffins
Ingredients:
3 ripe bananas (mashed)
3 eggs
3 tablespoons melted coconut oil
1 tsp vanilla extract
⅓ cup peanut butter
⅓ cup coconut or almond flour
⅓ cup cocoa powder
¾ tsp baking soda
¾ tsp baking powder
¼ tsp salt
¾ cup dark chocolate chips
⅓ cup peanut butter to swirl in to batter
Directions:
Preheat the oven to 350º
Line a muffin tin with paper liners
In a bowl combine the “wet” ingredients
Combine “dry” ingredients then mix all together
Fold in the chocolate chips
Divide the batter into the muffin tins.
Add more peanut butter to the top of each muffin and swirl in
Bake 15-20 min
