Quick Vegan Lunch

Ingredients:

  • 2 tortillas (I love Siete Foods grain free tortillas)

  • 1 tbsp hummus

  • 1/2 can of chickpeas

  • 1 tsp paprika

  • 1/2 avocado

  • pinch of salt

  • fresh herbs (optional)

Directions:

  1. Top chickpeas with paprika and salt

  2. Saute chickpeas for 3 minutes. Set aside

  3. Cook tortillas in the same pan to desired crispness

  4. Spread hummus on tortillas

  5. Add chickpeas, avocado, and herbs

  6. Enjoy!
