Quick Vegan Lunch
Ingredients:
2 tortillas (I love Siete Foods grain free tortillas)
1 tbsp hummus
1/2 can of chickpeas
1 tsp paprika
1/2 avocado
pinch of salt
fresh herbs (optional)
Directions:
Top chickpeas with paprika and salt
Saute chickpeas for 3 minutes. Set aside
Cook tortillas in the same pan to desired crispness
Spread hummus on tortillas
Add chickpeas, avocado, and herbs
Enjoy!
